Turkish delight or Lokum is a jelly like dessert cube with a large variety of flavours and ingredients such as hazelnuts, cinnamon and mint. The word Lokum is derived from an arabic word luqma(t) which is gotten from a turkish word lātiloḳum translating to “a sweet made with starch”.
Ingredients
- 4 cups of sugar
- 1 cup of cornstarch
- 1 tsp of cream of tartar
- Food colouring
- 2-3 tbsp of rosewater or lemon juice
- Pistachio (optional)
- Icing sugar (optional)
Procedure
- In a pot heat 4 cups of sugar and 1 1/2 cup of water until boiling and bubbling.
- In another pot add 1 3/4 cups of water, 1 cup of cornstarch and 1 tsp of cream of tartar then whisk while heating until thick and smooth like chocolate.
- Add the syrup into the cornstarch mix and heat for 30 minutes then add rosewater or lemon juice, 2-3 drops of food colouring and pistachio.
- Pour into a tray and leave to cool overnight or at least 6 hours.
- Cut into cubes and dust with icing sugar before serving.
