How to make Nigerian meat pie

Ingredients for the pie crust

•2 and half cups of purpose flour 

•A quarter cup of unsalted butter or use monita and omit the salt frozen and cut into small chunks 

•1 tbsp of sugar 

•1 tsp of salt 

•Icy cold water 

•No baking powder

•1 egg for glazing the surface  

Equipment

•Rolling pin 

•Brush 

•Cookie cutters 

•Aluminium foil container 

Procedure

• Mix the flour and the frozen butter with ur hands until the mixture is crumbly and resembles bread crumbs. Then add the sugar and (salt if ur using ur using unsalted butter) then add the very cold icy water to the mixture until u have a stiff dough. You can do this after you’ve made ur pie filling… 

Meat pie filling Ingredients 

• 200g of minced chicken breast(I prefer mincing my chicken at home that way I get to clean the chicken with vinegar and lemon)  or 200g of minced beef. 

•200g of diced carrots 

•200g of diced potatoes

•1 large onion diced 

•1 bay leaf 

•A tsp of thyme 

•Salt 

•2 stock cubes 

•A pinch of black pepper or attarugu any one you prefer 

•3 cloves of garlic 

•2 tbsp of vegetable oil 

•1 medium onion 

Instructions

Sauté the onions and garlic and onions. Add the minced meat, salt and stock cubes. Fry for about 5 minutes.  Add the diced carrots, diced potatoes, thyme, bay leaf and pepper, add water just sufficient to cook the vegetables.  When it’s done, add about half cup of water and dissolve 3tbsp of flour into the mixture. Allow the floury mixture to cook, taste and correct seasoning. 

To assemble the pie  

Divide the pie dough into 2. Roll it very thin in such a way that it will fit into the base of the foil container. Then add the pie filling then roll out the remaining pie dough using a cookie cutters to decorate the dough.  Then place it on top of the filling seal the edges and bake at 170 °C for 30min or more.
