As a homemade dish, Taiwanese egg fried rice is so simple to cook. All you need is a handful of common ingredients and a few minutes of quick stir-frying. For those who don’t really enjoy plain rice as a staple, these Taiwanese egg fried rice is much more appealing as the stir-frying process and ingredients make the rice more flavorful and colorful
Ingredients
- 4 cups white rice (cooked and cooled overnight in the fridge)
- 4 eggs
- 1/2 yellow onion
- 1 bunch green onion chopped (separated into white and green parts)
- 1 cup cooked protein (beef, tofu or sausage)
- 1/2 cup peas
- 1/2 cup carrots (chopped)
- 2-3 tbsp light flavored oil
- white pepper to taste
- 1 tsp sesame oil
- soy sauce(optional)
Procedure
To make this super easy Taiwanese egg fried rice ,follow the steps below:
- Cook and cool rice in advance as leftovers work great. Chop all vegetables finely. Beat the eggs in a mixing bowl with a dash of soy sauce and sesame oil.
- Heat up a wok over high heat, add 1tbsp oil and heat until it begins to shimmer. Add the eggs and let cook, stirring occasionally until scrambled and 70% cooked. Transfer the eggs into the original mixing bowl and set aside.
- A 1tbsp of oil into wok. Add the chopped yelloe ionion and whit part of scallions. Cook for 1-2 minutes until fragrant. Add the meat or sausage or tofu, followed by green peas, carrots and or any other stir fry ingredients you have.
- Add another glug of oil and then add rice. Quickly, stir-fry rvrvything together and break down the rice chunks without mushing together the individual grains. You may need to drizzle a bit more oil along the side of the wok as you do this. Each rice grain should be coated by a slight oil sheen when you are done.
- Add the scrambled eggs back into the wok and give it a quick stir. Add salt and white pepper to taste. Drizzle in the sesame.
- Place the long green part of the scallions and cut lime on the side of dished rice for garnish.
