Nkwobi spicy cow leg is a traditional delicacy commonly found in Nigeria. Nkwobi has it’s roots from the Igbo ethnic group of the Southeastern part of Nigeria. The name likely refers to ”meat of the leg” in Igbo. It is a spicy dish made up of cuts from cow foot or cow leg, palm oil, pepper, fresh utazi leaves or bitter leaf and edible potash. It is prepared by boiling cow foot until tender, then combining it with a thickened yellow palm oil mixture that includes potash, ground spices, and crayfish. Nwkobi is often served with utazi leaves for a bitter garnish and it is exclusively served in traditional restaurants.
Ingredients
- 1kg of cow leg
- 1 big onion
- 6 cloves of garlic
- 6 calabash nutmeg
- 1 tbsp of potash
- ½ cup of palm oil
- ½ cup of crayfish
- 1 tbsp of iru (locust bean)
- Salt to taste
- Stock cubes to taste
- 2 tsp of ground pepper
- 2 bunches of utazi leaves for garnish
- Onion rings for garnish
Procedure
To prepare this special local nwkobi cuisine, follow this easy peasy steps.
- Boil the cow foot with onion chunks, garlic and ginger pastes. Add stock cubes and salt. Boil till the water dries up and it is tender.
- In a pot mix the palm oil with liquid potash, turn till it curdles and turns yellow.
- Add the ground iru, crayfish, calabash nutmeg, pepper, salt and mix well.
- Now add the cow foot, into the palm oil mixture stir well and simmer on low heat for about 10mins.
- Dish and garnish with long thin slices of utazi and onion rings.
