Ingredients

7 or 8 cups pre-cut butternut squash

1 chopped red bell pepper

1 medium chopped yellow onion

3 cloves garlic smashed

7 cups water

1 tbsp salt

2 tbsp sugar

3/4 cup heavy cream, plus more for serving

1 tsp chopped fresh thyme for garnish

Procedure

To bring this easy, warm and comforting butternut squash soup into life and perfection, follow the simple steps below:

  • Combine the squash, pepper, onion, garlic, water, salt, and sugar ina large soup pot. Bring to a boil, then cover and simmer for 35 minutes.
  • Using a hand-held immersion blender, puree the soup until silky smooth. You can also cool the soup slightly then puree it in a blender in batches but remove the lid in the hole for the steam to escape.
  • Mix in the thyme or curry powder, then taste and adjust seasoning depending on the sweetness on the vegetables.
  • Ladle the soup into bowls, drizzle with more cream if desired for garnish and serve with love.
