Pina colada means strained pineapple in Spanish. It was created in Puerto Rico in the 1950’s. Pina colada has then been the national drink of Puerto Rico since 1978. It is usually made with rum, cream of coconut and freshly strained pineapple, we don’t drink alcohol, so we’ll skip the rum hence the ‘virgin Pina colada’. It is preferably blended with ice to give a slushy result.
Ingredients
- 1 cup pineapple juice
- ½ cup cream of coconut
- ¼ cup sprite
- ½ cup frozen pineapple chunks
- 1 cup ice cubes
- Pineapple slices for garnishing
- Cocktail umbrellas (optional)
Procedure
- Pour all ingredients in a blender (except sprite) and blend (I recommend a Vitamix blender).
- Pour blended mixture into pineapple scooped out shells or Poco Grande glass.
- Add sprite into the mixture.
- Garnish the edges of the pineapple shell or the cup with pineapple slices and or cocktail umbrellas.
