Shish kabob simply means shish-sword or skewer and kebab or kabob – roasted meat ( English rendering of Turkish). It is one of various types of kebab and a range of meat dishes that originate from the Middle East. It can also be found on Mediterranean cuisine. Shish kabob is a popular meal of skewered and grilled cubes of meat (beef, chicken and their likes).

Ingredients

  • 3lb beef
  • 1/2 tsp garlic powder
  • 2 seasoning cubes
  • 1 tsp white pepper
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 1/2 tsp ground green cardamom(optional)
  • 1 tsp paprika
  • salt to taste
  • 1 red onion
  • 1 cucumber sliced round
  • 3 bell peppers (red, yellow and green)
  • 2 lemons juiced
  • 1/2 cup honey
  • 1 cup olive oil or any oil of choice

Procedure

To make this mouth watering shish kabob, marinate the beef for at least 1 and half hours or 24 hours before grilling.

In a large bowl, add ground/ powdered spices, salt and mix together properly.

Add honey, olive oil, lemon juice and mix until properly incorporated.

In a separate bowl, add diced or cubed beef into the bowl and pat dry properly after washing. Make tiny incisions on the beef cubes to allow for proper marinade penetration. Add the the marinade to the beef cubes, rub and mix well working your hands making sure the marinade gets to and sits in the incisions made on the beef cubes.

Cover the marinated beef cubes and refrigerate for at least an hour or even overnight depending on your schedule.

Afterwards, remove from the refrigerator, and arrange them by alternating with bell papers, cucumbers and onions on bamboo/wooden or steel skewers (If you are using wooden or bamboo skewers, you will need to soak them in water for at least an hour to prevent the meat from sticking).

Preheat your grill 30minutes before grilling. Place your kabobs on the grill and cook for about 10 minutes. You will want to be turning the skewers and brushing over the kabobs with your remaining marinade.

Enjoy!
