Roast potato salad is a creamy salad recipe you will absolutely love as it tastes so much better than your normal potato salad. What makes this roast potato salad so good? the potatoes are roasted to deepen their flavor (you should be doing this for all your potato salads, no matter the type!). This salad comes together quickly, with very little fuss.

Ingredients

  • potatoes
  • onions
  • spring onions
  • dhania
  • cucumber
  • beef or chicken
  • boiled eggs

For Dressing

  • mayonaise
  • 2 tbsp mustard
  • 1 tbsp chili sauce/ketchup
  • 1 tbsp honey/sugar
  • 1 tbsp vinegar
  • black pepper

Procedure

To make this absolutely delicious roast potato salad, follow this simple steps. For the salad dressing, you can use ranch or any other salad.

  • Boil your potatoes till fork tender ensuring you dont overcook them. I added salt, garlic and fresh rosemary to mine while boiling to make them more flavorful.
  • Drain the water and set aside. Add your boiled potato to a bowl and season with a teaspoon each of paprika, garlic powder, onion powder and mixed herbs.
  • Add in some oil, i used beef fat that from roasting the beef(this makes it more flavorful)
  • Mix well then roast them in the oven or airfryer till crispy.
  • In the meantime, add your dressing to a bowl and go in with your onions, spring onions and cucumber and mix till well combined.
  • Once your roast potatoes are ready, add them to the mix, add your beef and mix again till well combined.
  • Garnish with fresh coriander and serve.
