Won’t you try this delicious rainbow rice? I bet you would. It’s simple, easy to cook, mouthwatering, healthy and it incorporates some very healthy choice of vegetables. Follow the steps below to learn how to make the most delicious rainbow rice!

Ingredients

  • Beef
  • Chili flakes
  • Salt
  • Seasoning
  • Fresh Basil
  • Rice
  • Onion
  • Garlic (optional)
  • Habanero
  • Sweet corn
  • Bell pepper (Red, Yellow, Green)
  • Red kidney
  • Ripe plantain (optional)
  • Preferred spices

Process

1. In a pot soak rice in boiling water ,cover and allow to sit until almost cooked or soft.

2. In a bowl, bring into it your beef, add chili flakes, salt and seasoning to taste .Cover and allow to marinade for about 20 min.

3. In a pot(preferably a wok or non stick pan or pot), add your vegetable oil/groundnut oil under medium heat; bring in your marinade beef, add some fresh basil leaves, fry and set aside.

4. After frying your beef, add your chopped onions, garlic and habanero pepper and fry for a bit.

5. Add in your sweet corn, chopped bell peppers, seasoning of preferred spices and fry for a bit under low heat.

6. Add red kidney to taste, fry for a bit and pour your already almost cooked rice, stir well until the rice and other veggies are incorporated, cover and allow to cook for a bit.

7. Lastly, add your already fried diced plantain, mix well ,cover and allow to simmer for a bit under low heat. You can serve your rainbow rice with a chilled cup of Pineapple or orange juice.
