  • farfalle pasta uncooked pasta
  • 2 cups tzatziki (optional)
  • 1 tbsp oregano
  • salt & pepper
  • 15ml olive oil
  • 1 sliced red onion
  • 1 cup chopped cucumber
  • 1/2 chopped red pepper
  • 2 cups lamb shoulder pulled lamb shoulder
  • 12 kalamata olives
  • fresh dill
  • fresh mint
  • Crumbled feta to taste

Procedure

To make this healthy packed, really quick and easy pulled lamb pasta salad recipe, follow this simple steps.

  • Add the pasta to a sauce pan of boiling water and simmer for 6-8 minutes until tender. Then rinse under cold water and drain.
  • Add the cooked pasta to a large mixing bowl, then add the oregano, salt, pepper, olive oil, red onions, red pepper, cherry tomatoes, cucumber, pulled lamb and Kalamata olives.
  • Mix thoroughly before topping with dill, mint and crumbled feta, then serve.
