Potato cups with beef or chicken filling is pretty much made with potato, beef or chicken, flour and a handful of spices/ ingredients depending on the quantity intended. It is super easy to make and that too within the shortest period of time except of course if you really want to have that intriguing, amazing and finger-licking flavor. The flavors infused are spicy and subtle all at the same time striking a balance for the taste buds.

Potato cups also have other varieties which are vegan friendly like vegan loaded smashed potatoes cups or cheesy as in cheesy mashed potato puffs. This particular recipe is perfect for that family breakfast and a perfect option on your Ramadan time table.

Ingredients

  • Potatoes
  • Flour
  • Chicken breast or Beef 1KG
  • Seasoning
  • 1/4 cup plain yoghurt
  • 1/4 cup oil
  • 2 tbsp soy sauce
  • 1 tbsp tomato paste
  • 1/4 tsp paprika
  • 1/4 tsp white pepper
  • 1/4 tsp onion powder
  • 1/4 tsp nutmeg
  • 1/4 tsp dried coriander
  • 1/4 tsp cumin
  • 1/4 tsp cardamom

Procedure

To make this mouth-watering, tasty and delicious potato cup with beef or chicken filling, follow the easy steps below;

1. In a pot, add potatoes, add in a little salt and bring to a boil until well cooked, set aside and allow to cool.

2. In an unbreakable bowl or mixing bowl, add shredded or chunked beef/ chicken pieces, add seasoning, paprika, cumin, cardamom, onion powder, nutmeg, coriander, white pepper, soy sauce, tomato paste and oil. Mix well until well incorporated and allow to marinate for at least 4 hours (could be less or ready to use immediately if you don’t have time on your side).

3. After marinating the protein, sauté them on low- medium heat until well cooked in a cast iron pan or non-stick pan and then set aside.

4. Now mash your Potatoes (you could season with chili pepper and oregano or with seasoning of choice), add flour and mix until well incorporated getting a mushy and sticky texture.

5. Bring out cup cakes baking tray, scoop a portion of the potato mixture and add to the cup holes making the shape of the holes with the potato mixture. Repeat until you finish the mixture,

6. Insert the tray into the oven and bake until golden brown. Fill in the potato cups with the sautéed protein and drizzle the tops with ketchup, hot chili sauce, or any dressing of choice. Enjoy with a roast potato salad or mixed green salad any other kind of salad.
