Pankasau is a traditional dish popularly known and made in the Northern part of Nigeria. It is delicious, nutritious ,simple and easy to make. Pankasau is basically made with wheat flour, yeast, water and vegetable oil(for frying) ; flour, sugar and salt are pretty much just optional to add or include as there are different methods of preparing it. Pankasau is generally paired with miyan taushe, miyan gyada or even mutton handi.

Ingredients

  • 2 and 1/2 cups wheat flour
  • 1 and 1/4 tbsp yeast
  • Sugar to taste
  • Salt to taste
  • Warm water
  • Vegetable oil for frying

Procedure

To make this crispy and chewy pankasau, follow these simple and short steps:

In a bowl, sieve into it 2 and 1/2 cups of wheat flour. Sieving is optional as I like to feel the somewhat coarse texture of the flour.

Measure out salt and sugar to taste, set aside. In 1 cup of water, add the yeast and set aside for 2 minutes.

Add the yeast mixture, sugar and salt to the measured out wheat flour and mix. Add water as you knead, the aim is to get a well combined medium soft dough; not hard and not runny, I prefer a sticky dough.

Cover the dough with cling film, container cover and set aside in a warm place to allow it rise.(I timed mine for 2hrs).

Afterwards, punch the beautiful risen dough and give it a little mix again. Scoop from it and form a doughnut like shape.

Fry on medium heat until somewhat brown on both sides and serve with miyan gyada, miyan taushe, mutton handi or any soup of choice.
