Cream buns are one of those universally loved treats—soft, fluffy bread filled with lightly sweetened cream or jam. They sit somewhere between a bakery staple and a comforting homemade snack, popular across Europe, Asia, and the Middle East in slightly different forms.
Cream buns are soft, enriched yeast buns that are baked until golden, then filled (or sometimes topped) with cream. The bread itself is slightly sweet, airy, and tender—similar to brioche. Here are a few common variations of cream buns; Classic cream buns which are split and filled with whipped cream like the Maritozzi(Italian cream buns), custard cream buns- filled with pastry cream instead of whipped cream, savory cream buns- filled with cream cheese or herbed spreads and buttercream buns which have richer and sweeter filling.
Ingredients
For the dough:
- 3 cups all-purpose flour
- 2 tbsp sugar
- 1 tsp salt
- 2 tsp instant yeast
- 1 cup warm milk
- 2 tbsp butter (softened)
- 1 egg
For the filling:
- 1 cup heavy whipping cream
- 2–3 tbsp powdered sugar
- 1 tsp vanilla extract
Procedure
To make this soft, fluffy and creamy cream buns, simply follow the steps below.
Step 1: Make the Dough
- In a bowl, mix flour, sugar, salt, and yeast. Then add warm milk, egg, butter and mix into a soft dough. The dough should be slightly sticky but manageable.
Step 2: Knead
- Knead the dough for about 8–10 minutes until smooth and elastic.
- You can do this by hand or with a mixer.
Step 3: First Rise
- Place the dough in a greased bowl.
- Cover and let it rise for about 1–1.5 hours or until it doubles in size.

Step 4: Shape the Buns
- Now punch down the dough.
- Divide into equal portions of about 8–10 pieces and shape into smooth balls.
- Place the balls on a baking tray with a space between each.
- Cover and let them rise again for another 30–45 minutes.
Step 5: Bake
- Preheat oven to 180°C (350°F)
- Then bake for 12–15 minutes until golden brown
- Remove from the oven and let them cool completely.
Step 7: Prepare the Cream
- Next, using a hand mixer, whip the cream with sugar and vanilla until soft peaks form.
- Chill the cream slightly before filling.
Step 8: Fill the Buns
- Slice each bun horizontally with a serrated knife(not all the way through)
- Fill the buns by Piping or using a spoon in whipped cream but don’t overfill the buns.
- You can dust the top with powdered sugar or drizzle some chocolate syrup
- You can also pair it with a hot black tea , tea mix or chai, fresh honey citrus hibiscus iced tea or hot a cup of coffee.
