Coconut cubes is a classic combination of ingredients that harmonize to give you the perfect snack or dessert for every occasion with family or friends. regardless of how simple it is. It has that spongy texture, deep and rich chocolate flavor and a little bit of nutty taste with a tropical touch of coconut flavor and taste from the desiccated coconut powder and coconut water, a taste of pineapple juice and vanilla flavor as well.
Ingredients
- 265g flour
- 2 eggs
- 225g sugar
- 125ml of milk
- Another 150ml milk
- 2tsp baking powder
- 125ml extra virgin olive oil
- 300g coconut flour/ desiccated coconut
- 50g dark chocolate
- 100g cocoa powder
- 2 tbsp mixture of a squeeze of pineapple juice, coconut milk, a hint of vanilla flavor.
- 125g butter
Procedure
To make this simple yet sweet coconut cubes, follow the steps below;
- Preheat your oven to 175°C .
- In a mixer bowl, add sugar, baking powder, flour, oil, mixture of pineaplle juice and vanilla, olive oil, eggs and milk. Mix until smooth and well incorporated.
- Next, line 30x35cm baking tray with baking paper and transfer the mixture into it and bake for 30 minutes until golden brown.
- Allow it to cool and cut them into cubes.
- In a saucpan, heat the butter and 150ml milk until butter is melted, then add sugar, cocoa powder and dark chocolate. Stir the mixture until well incorporated and smooth.
- Next, dip the cubes into the chocolate mixture on all sides for coating and place on a wire rack to drain off excess chocolate and settling.
- After a while, before the chocolate completely dries off, roll the chocolate coated cubes into the desiccated coconut or coconut powder and allow to completely settle. You could refrigerate for best results.
