Ingredients

  • 500g of kidneys chopped into small pieces

  • 5 cardamom pods

  • 2 large carrots julienned
  • 2 medium onions julienned
  • 1 red bell pepper and 1 green pepper julienned

  • Spices and seasoning

Procedure

  1. Put all the ingredients in a pot except the carrots, onions and peppers.
  2. add 1 or 2 cups of water; Season lightly because the water has to be reduced to a gravy.
  3. When the water has reduced to a gravy, taste to see if there is need to correct or adjust seasoning.
  4. In a different pot, sauté carrots, onions and pepper lightly ,then pour in kidney.
  5. Stir fry for a minute and turn off heat.(Serve with mashed potatoes or white rice)
