Ingredients
- 500g of kidneys chopped into small pieces
- 1tsp of white pepper
- 5 cardamom pods
- 6 ground red chillies or more
- 2tbsp of crushed ginger
- 1 tbsp. of crushed garlic
- 10 cloves
- 2 large carrots julienned
- 2 medium onions julienned
- 1 red bell pepper and 1 green pepper julienned
- A handful of spring onions
- Spices and seasoning
Procedure
- Put all the ingredients in a pot except the carrots, onions and peppers.
- add 1 or 2 cups of water; Season lightly because the water has to be reduced to a gravy.
- When the water has reduced to a gravy, taste to see if there is need to correct or adjust seasoning.
- In a different pot, sauté carrots, onions and pepper lightly ,then pour in kidney.
- Stir fry for a minute and turn off heat.(Serve with mashed potatoes or white rice)
