Apple cakes are cakes in which apples feature as a main flavour and ingredient. Apple cakes incorporate apples in a variety of forms, including diced, pureed, or stewed and can feature common additions like raisins, nuts, and ‘sweet’ spices such as cinnamon or nutmeg. This easy apple cake recipe is the perfect treat! It’s moist, tender, and filled with fresh apples.

Ingredients

  1. 4 medium apples (peeled, cored and chopped into chunks)
  1. 2 tsp cinnamon
  1. 6 tbsp. sugar

(Toss these three ingredients together and set aside)

Ingredients for the cake

  1.  3 cups flour
  1. 3 tsp baking powder
  1. 1 tsp. salt
  1. ½ cup vegetable oil
  1. 1/2 cup melted sugar
  1. 1 cup sugar
  1. 4 tbsp orange juie or milk
  1. 2 tsp vanilla essence
  1. 4 eggs, lightly beaten with fork
  1. 1 cup raisins (optional)

Procedure

  1. Pre heat oven to 170 c degrees.
  1. Grease the pan and dust it with flour.
  1. Sift the flour in a large bowl, then add baking powder and salt.
  1. In a separate bowl whisk together oil, orange juice, and sugar and vanilla.
  1. Mix wet ingredients into the dry ones, then add eggs, one at a time (mix with a wooden spoon or spatula, making sure to scrape down the sides of the bowl to ensure oil ingredients are incorporated.
  1. Pour the batter into prepared pan, spread the apple chunks over it and push them in lightly so they stick into the batter (don’t worry if the apples release some liquid, just add it all on the cake batter with the chunks, it will help caramelize the topping).
  1. Bake for about 1 hour or until a tester comes out clean.
